Chicken with Pecan Pesto

Sweet corn and pecans are autumn staples in Southern states. The pecan pesto adds rich, toasty flavor with lots of good- for you monounsaturated fats.

What you will need:

2 ears sweet corn
2 boneless chicken breasts
1/4 tsp black pepper
1 tbsp flat-leaf parsley
2 tsp Parmesan cheese grated
3 1/2 tsp extra virgin oil
3/4 tsp Simple Indulgence Italian Herb Seasoning Blend1/8 tsp kosher salt

What you will need to do:
  1. Fill water tray with 1 3/4 cup water. Place corn in Steamer Base and place Steamer Base on top of the Water Tray. 
  2. Place chicken in the Colander Tray on top with pepper and place Colander Tray on top of the Steamer Base.
  3. Cover and Microwave on high power for 14-16 minutes.
  4. Meanwhile combine remaining ingredients in base of the Chop N Prep Chef and pull cord 5-6 times to process until ingredients combine to form a pesto sauce. Top chicken with pesto and serve with corn.
