Chicken, Black Beans and Rice Bowl

What you will need:
Serves 4
  • 1 cup rice
  • 2 cups chicken broth
  • 2 tsp. Simple Indulgence Southwest Chipotle Seasoning Blend
  • 1 can (15.5 oz./440 g) black beans, drained
  • 6 oz./175 g package precooked chicken
  • Optional: 1 can (15.5 oz./440 g) diced tomatoes
What you will need to do:
  1. Place rice, broth, tomatoes if desired and seasoning blend in the bottom of 3-Qt./3L TupperWave® Casserole.
  2. Microwave on high power for 5 minutes, reduce power to 50% and continue microwaving an additional 15 minutes.
  3. During final 5 minutes of cooking time, mound beans in center of casserole and place chicken around beans.
  4. If necessary, continue heating until rice is soft and fluffy.
  5. Let stand 5-10 minutes before serving.
